Usually I find a way to relate the food I'm blogging about to the prevailing mood in which I prepared it or some story about my life that's been on my mind. Unfortunately the thing that's been on my mind lately is how crappy my high school days were and wishing I could tell that little nerd that everything's going to be okay. Anyway, it's too dark, and while that hasn't stopped me before, I'm trying to focus on positive things. So instead, before this excellent recipe for sausage pizza that I picked up from Bon Appétit's "What America Eats" issue (if you have to buy only one issue of BA a year, make this the one), I'm going to answer two very short memes from my (physician) colleagues, Dr. Claire(bear) and Dr. Em Dy, MD. I won't tag anyone, because as you all know, No Special Effects is where tags go to die.

The first one from Dr. Claire is just a playlist of my favorite (or mix-tape-worthy songs). I think people misunderstood my previous post: while I do listen to the stuff, they are by no means my favorite group or even my favorite type of music. The thing is, I like all sorts of music-- I don't write off an artist or genre until after I hear a few songs. However, as a result my playlists are so disjointed. Obviously I like listening to string quartets. I don't know why. And can you tell what my favorite band is?

The second one is from Dr. Em and it's the 123 Book Tag. I'm supposed to take the nearest book, turn to page 123, and post sentences 5-8. This is from the actual book I'm reading:

Oh my God, I've killed you all with boredom. Sorry. To make up for it, I'm going to add another book, "Waking Up Just In Time" by Abraham J. Twerski, a therapist. It's an interesting and enlightening read.
We give lip service to other people's basic rights, but in the very same breath we say that what they are doing isn't right at all, so it is not protected by our respecting their basic rights. This is a very flimsy rationalization for our wish to dominate other people or, at the very least, coerce them to accept our values. If we took the "Live and let live" motto literally and without rationalizations, we would all be much happier.


Blogging whiplash: back to the pizza!
Sausage, Red Onion, and Wild Mushroom Pizza
I prepared this last Valentine's Day together with the Sole Meuniére, Frasier, and some Potatoes Anna. Even without tomato sauce, it's still really good. My only regret is that I didn't cut up the sausages small enough, so they look uncomfortably chunky to me in the picture. As it turns out, rolling pizza dough with a rolling pin is not a bad way to go. It's not as fluffy and aerated as my previous pizzas but it does retain its shape better.

  • 2 pizza dough balls, each weighing 350g or 12oz

  • 2/3 cup finely grated Piave or Parmesan cheese

  • 2 teaspoons finely chopped fresh rosemary, divided

  • 1 teaspoon dried crushed red pepper

  • 1 tablespoon olive oil

  • 2 hot Italian sausages, casings removed

  • 1 small red onion, thinly sliced

  • 7oz (200g) fresh wild mushrooms (I used shiitake and oyster mushrooms)

  • 7oz (200g) coarsely grated whole-milk mozzarella cheese

Place a baking stone on the oven floor. Preheat the oven to 260°C (500°F) or the highest temperature your oven can manage. Heat the olive oil in a large skillet over high heat. Add the sausage and sauté until brown, about 5 minutes, breaking them in the process with the back of a spoon. Transfer the sausage to a bowl. In the skillet, sauté the onion until crisp-tender, about 2 minutes. Add to the cooked sausage. In the same skillet, sauté the mushrooms together with half a teaspoon of rosemary for about ten minutes, or until the moisture from the mushrooms has mostly boiled away (I have a small skillet, sue me). Add to the onions and sausage.

Work with one ball of dough at a time (don't start with the second until you're done baking the first). Stretch out a ball of dough into a 6-inch round. Sprinkle with half the remaining rosemary, red pepper, and Piave cheese. Roll out the round into a 12-inch round (roll in all directions), pressing in the seasonings. Sprinkle with half the mozzarella cheese and half the sausage mixture, leaving a 1/2-inch plain border. Bake on the hot oven stone for about 15 minutes. Serve immediately.

Thanks for doing the tag. I laughed out loud when I read what the nearest book was all about. Even I would get bored.

I so agree with Live and let live. We are sometimes too preoccupied about other people's lives. I don't think their lives should concern us unless we are personally affected. Talking about them even if we mean well (otherwise known as tsismis) will lead to no good. Remember always that they're as much adults as we are and can make their own choices.

Ahh,I've been waiting to see which of your recent culinary purchases would be the first to appear on your blog. The pizza is beautiful, but so it the pizza peel (aka Mark's Paddle).

I don't find the sausage to be too large -- I love chunky toppings, especially when they're sausage. This is my favorite pizza topping combination!

By the way, I'm seriously missing Project Runway and haven't found a new replacement for it yet. :-(

Dhanggit: There's red pepper built in to the crust, but it can always benefit from extra heat :) And please, just a glass of cola! :p

Allen: Huh, What America Eats indeed, lol :) I love my paddle (and it loves me back in a way). The fall shows are coming back slowly, but you might not be a fan of good old-fashioned scripted television.. You can always watch Idol, haha :) Or America's Next Best Dance Crew or something like that..

I do love your pizza, though. It looks fabulous! I often leave out the tomato sauce. Growing up, we always used fresh sliced toatoes on our pizza.

Susan: I don't blame you-- one is Japanese-composed. Few of those were released as singles. I like music that record producers don't, heh :) And it appears I like the first tracks of albums :) I am a tomato sauce lover-- sourer, better. This was an exception :)

Darlene: That was my intent! To make your son crave junk food, lol :) Homemade pizza is healthier since you decide what to put in-- I didn't drizzle oil on this or add salt. Some commerical pizzas can be too salty.

Toddiane: The oldest songs there are raspberry swirl and cruel summer, both from 1998. I like some Pet Shop Boys tunes, but for some reason I can't name more than Go West and that theme song from Beauty and the Geek. Thanks for the compliments! :)

Desie: A homemade pizza should be well within your reach! I find that the best way to introduce more thickness is to just stretch it by hand instead of being overzealoud with a rolling pin :)

It was snowing here yesterday - and that hearty, gutsy, meaty pizza would have been absolutely perfect... As it was I settled for steak, but next time you make that pizza, let me know first, huh? I'll bring the wine ;-)

That's a great looking pizza, Mark! I think the chunkiness of the ingredients is very enticing, like something you need to sink your teeth into. We ought to invest in better pizza gear, but we don't :( So our pizzas wind up oblong and uber-thin crust because that's the best kind of pizza we can make with cookie sheets right now (but it's goooooood).

Sweetie, don't dwell on things you can't change. Everyone has shit times that they can recall, but the point is that you have grown since then and things are... better. Right? At least I hope so. Jeremy was (is) a tortured soul - the quiet nerd growing up. It doesn't matter now though, he's a stud and has a kick ass babe for a wife (um, that'd be me *snort*) and he rocks. And since you're my friend, you are not allowed to be insecure or down on yourself because I say so and I also say you rock.

Tori is one of my faves and I don't care how old the disc is, I love all of her works. Have you heard Andrew Bird? He makes me swoon. I think liking a diverse range of music is a good sign.

My high school was crappy, too, if it's any consolation... To make things worse, I was so tiny people thought I was in 4th grade or something. :)

JenY: I have grown, I think, and things are much better now. It's just that I was recently contacted by someone who wasn't nice to me in high school asking for a favor, and memories just came flooding back. Thank you so much for coming to my aid. When you say I rock, I blush, hee :) Jeremy is awesome. Unlike me, he has a kick-ass babe, after all. And can ski. :D I have all of Tori's major albums and a few singles-- I only dislike a few, especially those weird interludes in Boys for Pele (Not the Red Baron). My favorite album of hers is always From the Choirgirl Hotel.

I love making pizza. This one looks really good. I don't usually put sausage on my pizza but will next time. It probably adds a lot of flavor.

hand rolled always tastes better, it must be the epidermal cells sloughing off on account of the repair mechanisms described on page 123 of your USMLE 1 reviewer (biochem or genetics?)
Chop up the sausages into smaller pieces and sautee with onions before using it to top the pizza. (drain fat though) the onions come out slightly caramelized- sweet and less pungent.
Alternatively, use sausages that have less binders (flour/starch), i.e. those that fall apart into chunky meat. Italian sausages tend to achieve this effect, I've noticed.

Megamom: I use Pricesmart Italian sausages. They're all ground pork and are fresh so they're not choppable-- more of pinchable as you squeeze it out of the casing. I was reading Biochem.
